Last night, I made a favorite at our house. I call it Bacon Cheeseburger Rollup and Trenton loves it. It's simple, easy, and quick. Especially, if you take Jenn's advice and brown a whole bunch of ground beef at once and put it in freezer bags. I didn't take any pictures because I was being lazy last night. The good thing about this recipe is it can be changed for different tastes. Last night, I had too much burger, so I made two. One with pepperjack cheese for Trenton and one with sharp cheddar for me. You could add peppers, olives, whatever. You could also use the same basic principle to make a pizza flavored one. Instead of bacon, use ham, sausage, or pepperoni and add a little pizza sauce instead of velveeta, whatever. If you're looking for something new...give it a try.
Bacon Cheeseburger Rollup
1 can crescent rolls
1/2-1 lb ground beef, browned and drained
8 slices bacon
1 onion, chopped
1 can mushrooms (optional)
4-6 oz Velveeta or 1 cup of any type of shredded cheese
Preheat oven to 400 degrees. Brown hamburger and drain (or if you were like me, take it out of the freezer, pop it in the microwave on defrost for a few minutes...and Voila!)
Cut bacon into small pieces. I used my kitchen shears. Place in hot skillet with chopped onion. Cook until bacon is fully cooked. I add the mushrooms about 1/2 way through just so they absorb more flavor. When the bacon is cooked, add the ground beef and cheese. Stir until melted together. Meanwhile, roll out crescent dough into a long rectangle on a baking pan. I used my round Pampered Chef stone. Once mixture is melted together, spoon down the center of the dough leaving room on both sides and a little space on the ends. Top with shredded cheese if desired. Bring up both sides and pinch a seam down the middle. Place in hot oven for 15-20 minutes. Enjoy!

this does sound super yummy! i did your bbq chicken one last night. it was a HUGE hit at my house. we had ZERO chicken breasts left over for me to bring in my lunch! i am glad you are posting recipes, it helps me out with meals:)

Erin I feel like I've been copying you blog topics alot lately and I just wanted to tell you it's unintentional. I swear. I hadn't even seen that you put a recipe up when I posted mine. It's just were obviously both so smart, aparently we think a like. I just didn't want you to be like that, Darn Corin needs to get her own topics. Heck maybe you don't read my blog I don't know. Corin- I don't think you're copying me...in fact, I'm grateful for the extra ideas! And we are obviously both really smart... :) I like recipes on blogs b/c I know real people have tried them and not someone in some stupid "test" kitchen somewhere who had no idea how "real" people cook!
